Wafers – A couple of irons in the fire.
Starting with the basic ingredients of water and flour, wafer dough can then be varied with many other ingredients, such as eggs, milk, cream, oil, and sugar.
Wafers can be classified according to their shape (flat, round, formed wafers, wafer rolls) or according to their consistency (soft or crispy). For this reason, an unbelievable amount of wafer recipes and shapes exist.


Industrial manufacturing of wafers takes place in specially developed, automated baking-ovens. Wafer dough is put on the lower heated plate of a pair of baking plates. These go through hot ovens, which are usually gas-heated. After the baking process has finished, the baking plates are opened and the wafers moulds are removed by means of compressed air, vacuum, or needles. They are then transported onwards for further processing.
