The reasons to develop new varieties and products are manifold. However, the main reason that drives us is our quest to meet and delight peoples’ individual tastes with the diversity of our products. Before a new variety comes on the market, however, it must go through a 6 month, or longer, product development process. Here it is extensively developed, tested, and improved.

Our test kitchen is a long room with a glazed front. It smells powerfully of cocoa and approximately 400 of the best ingredients from all over the world neatly line its shelves.

Here is where new varieties are created using the traditional methods of chocolate making. Each variety is a unique, very special composition. New ingredients are carefully combined with different chocolate masses and moulded into bars. The marketing department and product developers work closely together, finely adjusting each recipe.

Three percent more nuts, a 100 milligrams less spices – each variety goes through innumerable variations, until its combination of ingredients, fillings, and chocolate is perfect.

No expense is spared. The search for perfect harmony between a chocolate mass and filling sometimes leads to new recipes. One such example is our RITTER SPORT summer variety, White Chocolate made with skimmed yoghurt. It is a truly genuine innovation in the chocolate market.

The most important and long-standing requirement of our company tradition always applies to this process: Whatever’s written on the packet has to be chock-full of it! The thickness of our bars allows us to plentifully ply them with fillings and delicious ingredients, such as high-quality hazelnuts or whole almonds. The customer always stands at the end of each development chain. Selected testers taste and critically judge our new creations in consumer studies.

Only the best varieties, which pass this process are later produced. Often, handmade samples are tested in production. However, we will only produce a new variety if its raw materials can be supplied at consistently high quality and it can be manufactured in accordance to RITTER SPORT’S quality standards. It is only after every detail has been thoroughly checked that the secret is revealed and the new variety is presented to the public.
