Whey consists of water (approx. 94%), nutritionally physiologically valuable whey protein (approx. 0.8%), lactose (approx. 4-5%), and valuable minerals (approx. 0.6%). It is creamy white and has a sweetish fuller flavour. It is a by-product of cheese production and is almost fat-free. However, it is also rich in vital vitamins and minerals.

Sweet and sour whey are differentiated between. Sweet whey is created when a mixture of the enzymes, chymosin and pepsin, are used to produce cheese. Sour whey is made when milk is curdled by means of acidification, with the help of lactic acid cultures.

During the production of sweet whey powder, sweet whey is first concentrated with degraded pressure, then the remaining water is removed. This either done through spray or roller drying. Sweet whey powder is used in our very special RITTER SPORT milk powder mixture. It contributes to making our milk chocolates taste so full-bodied and milky.
