Sugar is a sweet tasting carbohydrate that occurs in many forms in nature. Sugar plays an important role in our diet. There is a difference between cane sugar made from sugar cane and beet sugar made from sugar beet.

Sugar's quality is judged according to its sweetness, solubility, and purity. Its colour, crystal size, and outer form also play a role. To make sugar from sugar beet, beets are washed, sliced, and the sugar is extracted by means of hot water. The raw juice produced in this process is then purified and thickened. After this, the sugar is crystallised. White sugar is made by means of recrystallisation (dissolving and crystallising again).
