Skimmed milk powder is a dry milk product. It is made from skimmed milk and contains a maximum of 1.5% fat, and maximum of 5% water. It is a white to weak yellow powder and has a lightly sweet, milky smell and taste.
Because of fresh milk’s high water content, no liquid milk products are used in chocolate production. During the production of milk powder, all moisture is removed from milk. However, the important nutrients are kept.
