Fondant is a delicate, crystalline paste that gently melts on the tongue. It is normally made from sugar or glucose, with the addition of glucose syrup, inverted sugar, or sorbitol. Strong kneading and rapid cooling mean that the hot cooking mass crystallises extremely finely, transforming into a pasty substance. This is used as a filling for chocolates and pralines. Fondant forms the basis of the filling for RITTER SPORT Peppermint. The peppermint filling also contains peppermint oil.
